Soup from your old veg and leftovers is delicious, as Chloe and Tina from our Shrewsbury #Cookwise sessions discovered. Chef Marcus Bean’s #CookWise tips for soup are to make it thick – you can add stock or milk afterwards – and be creative! Mix up the ingredients, try some toppings like croutons or spicy nut dukkah to keep it interesting.
Tina came across a recipe for Tuscan Ribollita, sort of a thick soup….perfect for some stale bread she had in a cupboard, leftover kale, wilted parsley and a piece of Parmesan that had been lurking at the back of her fridge for a while now. It tasted so good, she’s going to keep on looking for interesting ways to soup her leftovers.
