Cooked too many roast potatoes? Loads of turkey and stuffing scraps? No problem – try Maria’s fantastic Festive Balls recipe.
Maria’s Festive Balls
225g of any cooked meat
1 small onion or a couple of handfuls of any cooked veg you have left over
1 teaspoon of dried herbs or 2 tablespoons fresh parsley – or any other herb of your choice. (sage with pork is lovely but you only need 1 tablespoon)
1 clove of garlic crushed
1 small egg beaten
Plain flour seasoned with salt and pepper
Mince, zuzz or chop the meat. Add the all the other ingredients and either zuzz or mash together. Dip your hands into cold water and roll into balls. Roll each ball in seasoned flour. At this point you can freeze then or chill them to cook later. When you are ready to cook them, dip them in egg, slaver on the bread crumbs and heat a little oil in a non-stick pan and fry for 5 minutes on each side.
Remember with this recipe that quantities are only approximate so feel free to experiment. You can always check how it tasted by test frying a small amount before rolling the balls!
