Simple ways to have a stress free Christmas, we love ’em! Here’s a great idea from our chef Maria. Why not make a curry sauce now, ready to jazz up leftovers and feed all those extra people in the house.
The Christmas Curry!
2 tablespoons of oil or butter
1 onion – chopped
1 dessert spoon of flour (GF is ok too)
3/4 pint of vegetable stock (or chicken stock)
1 tablespoon curry powder
1 dessert spoon of curry paste (your preferred flavour/heat)
1 chopped apple (can be eating or cooking)
1 dessert spoon of pickle or chutney
1 tablespoon of lemon juice (fresh or bottled)
Salt & pepper
Fry the onions in the oil/butter until soft. Add the flour with the curry powder & paste. Gradually add the stock whilst stirring. Add remaining ingredients & simmer for 30 minutes*. Check salt & pepper – add to your personal taste. Tub up, place lid loosely on the tub & put in a cool place to cool down – then freeze or put in the fridge. If you are not freezing it then use within 3 days. Don’t forget to label what it is & when you made it!
When you come to use it defrost in the fridge or if you are using it straight away you can defrost & heat it immediately in the microwave. You can then add any leftover turkey or other meats plus any cooked vegetables. Simmer for 10 minutes & just keep an eye on whether you need to add any extra water.
You can serve this with rice, sliced bananas, yoghurt with cucumber &/or tomato, onion & coriander salsa.
* You can also add any cooked meat or vegetables for the last 10 minutes of the initial cooking time & freeze the curry in portions.
