Here’s Maria from Casa Del Mar with a wickedly good way to use up any leftover Christmas pud or biscuits. Christmas Tiffin! Mmmm…..
200 g digestive biscuits – or any other broken biscuits lurking in a tin!
100 g butter and 50g raisins or 100g Christmas pudding and 50g butter
2 tbsp golden syrup
2 tbsp cocoa powder
100 g dark chocolate to melt on the top
Butter an 18 cm sandwich tin. Put the biscuits into a strong plastic freezer bag and bash into uneven crumbs with a rolling pin. Melt the butter and syrup in a pan or a bowl in the microwave. Stir in the cocoa and the raisins or christmas pudding, and finally the biscuit crumbs. Mix well. Spoon into the sandwich tin and press down firmly and chill for 1/2 an hour.
Melt the chocolate in either the microwave or in a bowl over boiling water – spread over the biscuit base and chill again for at least another 1/2 an hour.
